Herbs have a variety of uses and are extremely versatile plants. Although their most common use is probably for culinary purposes, they are also used to provide fragrance, in cosmetics and teas, for medicinal use, as dyes, for the control of some pests and in companion planting schemes, to attract bees and butterflies or purely for decoration in the home and garden.
Although there’s nothing to compare with the taste of freshly picked herbs, it’s also possible to harvest them for drying or freezing in bags or ice cube trays for use at a later date when some are not available in the garden. The hardy, evergreen perennials can be cut and used fresh throughout the year, but remember to cut more sparingly throughout the Winter period.
